3 Ingredient Asian Peanut Salad Dressing


Okay… So this may seem weird but bare with me because it actually tastes pretty darn great! More often than not my office fridge is stocked with an industrial sized bag of iceberg lettuce. Which is definitely my least favorite sort of salad leaf. Give me red leaf, romaine, spinach, I love it all! But iceberg is so… Blah. In my opinion, Asian dressings are the only way to make iceberg lettuce tolerable. I keep a sesame ginger dressing at work but by Thursday I couldn’t do it… 4 days of the same exact boring salad for lunch? No, thank you.

This is how my new salad dressing was born. It’s hearty, creamy, spicy, and savory. It totally kicks iceberg up a notch. And so, ridiculously easy to make… It will take all of 45 seconds. It’s not the healthiest thing in the world but it was what was in the fridge/pantry at the moment. It’s also only approximately 125 calories.


1. Spoonful of crunchy peanut butter (~90 cals)
2. Squirt of fake Sriracha (~20 cals)
3. Splash of soy sauce (~15 cals)
4. Water

1. Scoop, squirt, splash, add water. Mix, mix, mix. Pour over lettuce of choice!

  1. I make a lite version of this with powdered peanut butter (pb2 brand), reduced-sodium soy sauce, and Sriracha. It’s awesome on green beans, noodles, whatever you have in the fridge!

  2. Oh, cool! I’ve been looking for one. I just started a diet where I am supposed to go dairy free, wheat free, soy free, alcohol free (but thankfully not caffeine free!!!) for a month, and while most of that is no problem at all I do like to use soy sauce as a condiment sometimes.
