What a Hungry Vegan Can Accomplish

 Today was one of those awesome Saturdays. Our only plan for the day was spending some time at the zoo. I slept in until about 10:30. I Slowly drank 2 cups of coffee while downloading new music because my iPod is seriously outdated. By the time we actually arrived at the zoo it was past 1:00. Before we knew it the clock read 4:00 pm. I had nothing in my system Besides coffee and a piece of toast with cinnamon cashew butter (which is delish by the way). Needless to say after 3 hours of walking around the zoo we were really, really hungry!

We went to Soup Plantation for a late lunch, early dinner type of meals. Aside from the vegan rice salad I didn’t really care for and some zucchini, I pretty much cleaned up everything on my tray. Although it looks like a ridiculous amount of food, and is a lot of food, I had no problem eating it. The shear volume of food you eat on a plant based diet can seem crazy and almost glutinous if you aren’t accustomed to it. But in reality this meal is well under 1000 calories, probably in the 600-800 range. Crazy, right?! The point is, a plant based lifestyle is definitely one of abundance! There is no need to restrict calories in this lifestyle.
