I never thought you could make a curry without cooking… I proved myself wrong! For this dish you will need these ingredients:
- 1 zucchini per person
- coconut milk
- 1-2 limes
- Ginger root (about a thumb-sized amount)
- ground cumin
- *optional salt & pepper
You will also need these kitchen tools:
- vegetable spiralizer (if you don’t know what this is definitely google it… it’s my favorite kitchen tool!!!)
- a fine grater
1. Spiralize that zucchini!
2. In a mixing bowl combine 1/3-1/2 a cup of coconut milk, the juice of 1-2 limes, the grated ginger, and a teaspoon of cumin. Add salt & pepper to taste if you wish.
3. Pour that curry sauce over your zucchini noodles and enjoy!
