Sesame Citrus Noodle Salad

Are you looking for a cold summer dish that is all at once hearty, sweet, tangy, savory, refreshing, and filling? Try this salad! This salad is great to make in a large quantity! Summer is the perfect time to dine with friends, and I highly recommend this dish for your next potluck, picnic, or dinner party. It is as beautiful as it is delicious :). Pictured above is a massive quantity, but below I will scale down the recipe, should be enough to feed 8!

Dressing:

1 cup of Soy Sauce
3/4 cup of Sesame Oil
3/4 cup of Honey or Agave Nectar
2 tablespoons of minced garlic
The juice of 1 Tangerine or your citrus fruit of choice (the tangerine gives it a delicious tangy-sweet flavor though!!!)

Noodle Ingredients

2 lb bag of spaghetti (regular or whole wheat)
2 Red Peppers, sliced
1 Head of Broccoli (florets)
1 cup of carrots (sliced into pennies)

Toppers:
Green Onions
Sesame Seeds

Directions:
Bring two pots of water to a boil.
In one pot add the noodles.
In the other boil the vegetables for about 5 minutes only (don’t want them to get too mushy or lose their color but just enough to soften them up!)
Drain & Combine.
Pour dressing over.
Slice up the green onion and sprinkle generously on top
Sprinkle sesame seeds generously on top
Refrigerate for a few hours until it is nice and cool.

Serve and enjoy!
