It is the middle of the night. I have been traveling for the last three weeks and I am finally home! After wedding/cruising/boozing combined with the heat of an early San Diego summer ALL I WANT TO DO IS DRINK ICE WATER AND EAT FRUIT (p.s. future blog post to come on eating vegan on a cruise!). My body is definitely craving a detox, and now that I’m home I actually can!!! :). So while I sit here in my overheated, non air conditioned apartment in the middle of the night I am thinking about all the fruit I am going to buy before work. They are some of my all time favorites! One thing all these fruits have in common is they require little to no preparation, and I am feeling especially lazy as I plan tomorrow’s (today’s?) fruit feast. Mmmm mouth salivating just thinking about the fruity goodness!
I’m going to drink at least 4 liters of water (you heard!). Hydrate, hydrate, hydrate! To make this experience enjoyable there will be lots of ice and lemon juice squeezed in to make it extra wonderful and refreshing.
For breakfast (during my morning commute) I will shove probably 2-3 bananas in my face. Bananas truly are fast food. Sweet, creamy, filling, speckled brown, perfect bananas. You can read more about my love of bananas here.
At work I will snack on purple or red grapes to my heart’s content for lunch. Right now grapes sound like literally the most perfect food on earth. Sweet subtly sour bursts of clear and juicy bliss.
When I get home I will blend up a watermelon, add some ice and mint, and head directly for the pool. I don’t know if you have ever sipped ice cold watermelon juice poolside, but I highly suggest you try this. Subliminal happiness are the words that come to mind.
I’ll end the day with my essential baby kale salad with shredded carrots and ginger dressing simply because I have all the ingredients in my fridge. It is my go-to lately, I’ll have to post the dressing recipe soon! (seriously yummy).
