Vegan Apple Oat & Carrot Zucchini Muffins


After a hectic few weeks of moving into our new home, the other night I decided it was time to make the house smell like a home and break in the beautiful baby-pink Kitchen Aid my Great grandmother gave to me as a wedding gift!

I am really not much of a baker but I want to get better about it. The only think I really ever bake from scratch is Challah. But I decided to jump right in and test out these two recipes I found perusing Pinterest and have had pinned for months. I pretty much followed the recipes to a T but I didn’t have baking powder so I just added a little more baking soda than was called for and it seemed to work fine. I only had enough Zucchini for about half of what was called for so I substituted with carrots and it worked great. Also I didn’t have raisins on hand so I got creative…



I was very happy with the end result! They are both super tasty :). My favorite were the apple bran and Jon’s favorite were the Zucchini-Carrot. So Win-Win.
