Super Simple Dairy-Free Quiche!

photo 2-9On Saturday we hosted our housewarming party! It was so, so, so much fun. We ended up having 14 people pop in throughout the day. My marker of a great party is when you have multiple guests stay for lunch and dinner, we didn’t want the festivities to end!

It was a potluck-grill extravaganza. I decided that the logical dish for me to make was quiche with all the eggs I get from our girls, even though I had never made it. I had enough to make three from scratch! I made two Asparagus-Spinach-Broccoli-Onion Quiches and one Potato-Onion Quiche. It was super easy and super yummy!

I followed this recipe I found on Pinterest for savory tart crust and just replaced the butter with margarine to make it dairy free. It was so yummy and had a great fluffy-to-flakey ratio.

Directions: Stir-Fry any veggies you have on hand. If you want to use potatoes I suggest baking them at the same time you bake the crust to make sure they are nice and soft. Slice onions and Potatoes so they are nice and thin. Fill the crust with veggies and pour over beaten eggs. I approximated about 6 eggs per quiche (not including the egg-yolk in the crust. I just saved the egg whites and added those to the rest of the eggs).

Bake at 350 degrees for 75 minutes. Let cool and enjoy!

I think I am going to officially be the Quiche lady for all future potluck parties. It is so easy! The backyard eggs are so rich and flavorful that adding cheese would disservice the dish anyways- let the main ingredient shine :).
