I just keep on finding ways to enjoy these backyard eggs. One of my favorites is the classic, poached style egg. I covered a small tortilla with vegetarian refried beans, jalepenos, and half an avocado, placed the poached eggs on top, and drizzled hot sauce on top. OMG so0o0o yummy. I would describe this meal as rich, creamy, spicy, and filling.
The thing that I really like about this meal is it meets a lot of my specific dietary needs. As a dairy-free vegetarian, a lot of my diet consists of healthy carbohydrates. This meal has a ton of healthy protein and fat, enough to get me through an entire day feeling vibrant and energized really. If I have this meal and the rest of the day am eating leafy greens, fruits, and veggies, I am feeling pretty darn well-balanced :).
This would be a great meal for someone who has a lot of errands to run, house/yard work, and heavy lifting :). Enjoy!
