Raw “Pad Thai” Cucumber Salad

Okay… This is probably my tastiest creation in awhile! I love “real” pad thai with rice noodles as much as the next person, but in the warm summer months I can honestly say I prefer this cold version. It’s light and refreshing, and just as flavorful and satisfying as the original dish. 🙂 Seriously, my tastebuds are in heaven as I type this…

Step 1: Make the sauce. Combine 1/4 cup teriyaki sauce, 2 tbsp peanut butter, 1 tsp minced garlic, a squirt of sriracha, and a squirt of lime juice in a large mixing bowl.

Step 2: Add directly to the mixing bowl the shredded carrots, bean sprouts, green onions.

Step 3: Spiralize 2 large cucumbers into the mix. Mix it alllllll up!

Step 4: Garnish with fresh jalepeno, fancy carrots, an avocado, and more green onion.

THATS IT :).

Side note – I’m calling this recipe raw, although I’m not sure if it is 100% raw, if that is important to you, since I’m not sure the peanut butter I used in the sauce is raw. But
