Okay, these may not be beautiful works of art, but they are packed with protein, tasty, easy for on-the-go, and totally a power food! Great running fuel if you are eating super clean. Or if you want to jazz it up you can put them on an English muffin, add your favorite fixin’s, and make your own version of the egg mcmuffin. :).
1 dozen eggs
3-4 cups of spinach
1/4 cup sliced pickled jalepenos (the kind you easily find in a jar)
1 tbsp coconut oil
Salt and pepper to taste
1. Preheat the oven to 375 degrees.
2. “Grease” the muffin tin with coconut oil.
3. Whisk the eggs.
5. Add the spinach, jalepenos, salt and pepper to the whisked eggs.
6. Pour mixture into the muffin tray.
7. Bake for 20 minutes.
