Yesterday I was working with the few food items I had at home (I haven’t really been grocery shopping since July 10th other than picking up produce/small items here and there. So yeah, I was kinda desperate. It wasn’t a perfect day of eating, I wouldn’t say I was super satisfied. But it was still pretty decent!
Breakfast: Blueberry smoothie, water, and coffee.
I pretty much always have bags of frozen blueberries because I am super lucky and have pretty much unlimited access to bushes and bushes :). The smoothie is mostly just frozen blueberries and water, with the last bit of coconut milk I had (maybe half a cup?). It’s definitely more delicious with coconut milk. But like I said, it was kind of a pathetically sparse day.
Lunch: Peas with Walla Walla Sweet Onion Vinaigrette
Ya, I grabbed the bag of half-full frozen peas. I ate the peas in two rounds. The first one I dressed with the Walla Walla Sweet Onion Vinaigrette I have in the work fridge. It was actually pretty good! The second round I just went peas with salt. I should mention that multiple coworkers commented that it smelled like peas LOL. I was pretty embarrassed, because it pretty much is baby food.
My staple food which I could not live without. I have a theory that my Russian/Eastern European heritage is why I love potatoes so much. I am able to digest them better than any other starch. They are filling, but not like TOO filling, if you know what I’m saying. Disclaimer: that picture of potatoes is from a different night, but it basically looked the same! I was really hungry and forgot to take a photo haha.
Not Pictured: Popcorn and 2 pints of home-brewed IPA (thanks hubby!)
