Hi there! Last nighy I was realllllly craving a jumbo sized pesto salad with dark greens. But I didn’t have the ingredients. And I wanted to go home more than I wanted to stop at the grocery store.
I looked in my bare cupboards (time for a groceey haul this weekend, needs to happen) and saw a can of pumpkin puree. I bought it back in November when I thought I’d try to make a pumpkin pie.(didn’t happen, lol)
I scooped out the entire can, added a heaping spoonful of sugar and a rediculous amount if cinnamon, stirred it all together, and zapped it in the microwave for 2 minutes. I topped it with pumpkin and hemp seeds and granola.
It was kind of weird to have for dinner, but I would make it again for breakfast, definitely! 🙂 Maybe throw in some vanilla extract and a spoonful of nut butter… yum!
